Basil
- indispensable for many Mediterranean dishes. The sweet clove-like
leaf is superb on fresh tomatoes with a little salad oil. Cinnamon
basil and Thai basil are also available. On request we can also grow
Anise, Lemon, Greek, Holy and Bush Basil.

Chervil
- one of the classic fines herbs much used in French cuisine.
Its delicate flavored leaves are indispensable in salads, omelettes
and dressings. Use in addition or as a substitute to parsley.

Chives
- freshly chopped and sprinkled on soup, salads, cooked vegetables
and egg dishes will add a mild onion-like flavor.

Dill
- has a delicate aniseed flavour. When grounded, it can be used
to flavour herb butter, mayonnaise and mustard. The leaves go well
with fish, cream cheese and cucumber.

Lemon Balm
- add fresh leaves to vinegar, teas and drinks. Chopped with fish mushroom dishes and soft cheeses.

Lemon Verbena
- use fresh leaves to flavour oil, vinegar, drinks, fruit puddings, cakes and stuffings. Infuse in finger bowls. Also chopped and added to home made ice cream.

Marjoram
- mild savoury flavour which is ideal in thick vegetable soups,
meat dishes and paste. Tomatoes, courgettes, potatoes, peppers are
enhanced by its flavour.

Mints
- have clean sharp flavours and aid digestion. Wide range of
uses in salads, syrups, teas, sauces, drink punches and desserts.
Gingermint, spearmint, peppermint, pineapplemint and applemint are

Oregano
- a stronger savoury flavor than that of marjoram. Great with pizzas.
Can be used like marjoram but more sparingly.

Flat
Leaf Parsley - Italian parsley is larger with a stronger flavour
to the smaller and more delicate French parsley. Add it to a bouquet
garni with bay and thyme. Use in salads, sandwiches, soup, sauces,
mayonnaise and egg dishes. Both types of parsley are available.

Rosemary
- this aromatic resinous leaf aids in the digestion of fats and
is traditionally sprinkled on roast lamb, sausage meats, pate and stuffings.

Sage
- pungent herb which complements strongly flavoured foods such

Tarragon
- an aristocratic herb with a savoury flavour and hidden tang.
One of the fines herbs with chervil and parsley. Use in bearniase
and hollandaise sauces, soups, fish dishes and with delicate vegetables.

Thyme
- used in bouquet garni with parsley and bay. It stimulates
the appetite and aids digestion of fatty foods. Good with meats, shellfish,
poultry, game, stuffings and butters. Lemon thyme, lemon curd thyme,
golden lemon thyme, and broad leafed thyme are also available.

Lovage
- the leaves and stems have a meaty flavor. Use sparingly in soup

- is a miniture variation of the pansy. Also known as Johnny-jump-up.

Calendula
- (pot marigold) Individual petals add a yellow tint to soups,
spreads or scrambled eggs. Well-known for centuries for its medicinal
properties.
